Hyatt Regency Coconut Point Resort & Spa Expands F&B Team

Hyatt Regency Coconut Point Resort & Spa, an award-winning resort in Bonita Springs, near the city of Naples in Southwest Florida, promoted Justin Spott as Chef De Cuisine and welcomed Jonathan Egged as General Manager of the resort’s signature restaurant, Tarpon Bay. Spott and Egged join the leadership team at Tarpon Bay as the restaurant prepares to reopen in early spring following an extensive renovation project.

With their incredible backgrounds working in the hotel and restaurant industry, we are excited to see their vision for the new restaurant come to life through an inventive and one-of-a-kind dining experience here in Southwest Florida.”

With 18 years of experience working in the hospitality industry, Spott has always loved working in restaurants and calls the kitchen his “home away from home.” Originally from Richmond, Virginia, Spott began his career by working as a busser for Texas Roadhouse followed by his first role in the kitchen as a banquet cook for Meriwether-Godsey at the Lewis Ginter Botanical Gardens.

In 2012, Spott moved to Florida and began his Hyatt career working as a line cook at Hyatt Regency Coconut Point.  His hands-on education and experience in the culinary field allowed him to advance within the culinary team at Hyatt Regency Coconut Point over the course of 10 successful years working with the hotel. Throughout his impressive career, Spott has been a member of the American Culinary Federation and has received multiple recognitions at Hyatt Regency Coconut Point including “Employee of the Month” and the “Rising Star Award.”

With the restaurant’s new chef’s table concept, I look forward to developing exciting tasting menus that showcase seasonal ingredients, while continuing to elevate our restaurant into the premier gourmet dining experience in Southwest Florida.”

Originally from Hawaii, Egged began working in restaurants as a host in a Waikiki beachside restaurant.  He began his Hyatt career in 2012 working at Hyatt Regency San Francisco, located in the city’s world-renowned Embarcadero district. During his time in the Bay Area, he completed Hyatt’s Corporate Management Training Program, which taught him the principles of upholding Hyatt’s five-star, five-diamond standards in every department of the hotel.  

Throughout his time working with Hyatt, he has held management and leadership positions at hotels and resorts around the country including Park Hyatt Aviara Golf Resort & Spa in Carlsbad, CA, Park Hyatt New York, and Hyatt Regency Scottsdale Resort & Spa.

Tarpon Bay, known for its fresh Florida inspired seafood, is completing an extensive renovation to provide an enhanced dining experience.  The new restaurant is expected to host a grand reopening event at the end of March.
