C&S Restaurant Group to Honor Anthony Bourdain's Legacy

To celebrate the life and legacy of Anthony Bourdain on Thursday, June 25, Hugo’s Oyster Bar and C&S Seafood and Oyster Bar will offer limited specialty menus inspired by Bourdain and his friend, Eric Ripert. In 2019, Bourdain’s friends Eric Ripert and José Andrés coined June 25, what should have been Bourdain’s 63rd birthday, as national Bourdain Day in honor of his influential life and work. As fans and admirers of Bourdain’s books, shows and candor, C&S Restaurant Group owners Jon Schwenk and Rich Clark have put together a special occasion in memory of his impactful life.

“I met Bourdain once during the many years I worked with Eric Ripert at Le Bernardin and have an incredible amount of admiration for his intimate knowledge and respect for food,” says chef Jon Schwenk. “He traveled the world visiting drastically different restaurants, kitchens and cultures, but he entered every establishment with the same reverence whether it was a fine dining restaurant or a hole-in-the-wall diner. That always resonated with me.”

On Thursday, June 25 only, both restaurants will honor the renowned author, chef and TV star with specialty menus. Hugo’s Oyster Bar will serve small plates inspired by the Louisiana episode of Bourdain’s Food Network TV show, A Cook’s Tour, including Sautéed Chicken Livers, Soft Shell Crab & Fried Green Tomatoes, Crispy Gator Bites, New Orleans BBQ Shrimp and Hot & Sour Catfish. C&S Seafood and Oyster Bar will serve dishes from Eric Ripert’s cookbook along with a collaborative dish from an episode of On The Table With Eric Ripert. Guests are welcome to enjoy Deviled Eggs with Smoked Salmon, Black Pepper & Cognac Shrimp, Pan Roasted Salmon, Anthony Bourdain’s Seafood Stew and Red Snapper with Seared Tomatillos. In addition, both restaurants will also offer a special drink menu with Bourdain’s signature drink of choice, a Negroni, so customers can properly toast to the occasion.

Finally, the restaurant group has pledged to donate a percentage of menu sales to the Culinary Institute of America’s Anthony Bourdain Legacy Scholarship. The scholarship fund provides grant money to help students pursue study abroad and international cuisines and cultures as part of their education.
