American-Italian Concept Fiatto to Open in Dallas

Fiatto, the casual chef-driven American-Italian restaurant featuring a menu rooted in seasonality, is opening to the public on Friday, March 11.

Located at the corner of McKinney Avenue and Blackburn Street, 3700 McKinney Ave, Suite 126 in Dallas (former Eureka spot), Fiatto will be open for happy hour and dinner only, with brunch added in the coming weeks.

The space, designed by Coeval Studio, was inspired by the coastal seascapes and craftsman techniques. Using bright pops of color to create a playful but balanced space. Layered with textiles, textures, and natural elements to create a warm and inviting dining experience.  

The restaurant boasts 4,000 square-feet inside with seating for 102 in the dining area and 12 at the bar. Guests can also enjoy the spacious and welcoming 800 square foot, dog-friendly patio that seats 46 people.

Fiatto’s Executive Chef/Partner, Kylil Henson has created a menu of almost everything from scratch including breads, pastas, mozzarella, burrata, all sauces and stocks. Henson will be changing the menu every month to reflect what is in season. 

Chef Henson is humble with a strong culinary background and has quietly worked his way through some of the most notable kitchens. Before moving to Dallas in 2018 and working at Flora Street Café, Henson honed his craft in respected kitchens such as French Laundry and DBGB Kitchen and Bar by Daniel Boulud but also staged at 2 Michelin Star, Coque in Madrid, Spain. 

Born and raised in South Philadelphia, with an upbringing rooted in Italian culture and cuisine, Chef Henson created an opening menu with starters including Pumpkin Arancini – Sicilian rice fritter, smoked mozzarella, sage, hazelnut crema; Prosciutto Crostino – whipped ricotta, pear, grilled sourdough, truffle honey; Tuna Carpaccio – orange, Calabrian chili, celery, saffron aioli; and Shishito Peppers – smoked pimento, bonito, tonnato sauce and more. 

Guests can expect entrees such as Agnolotti – stuffed with butternut squash, brussels sprouts, hazelnuts, brown butter, Pecorino Romano; Pappardelle – short rib ragu, ricotta, crispy rosemary; Pork Chop Milanese – apple, fennel, arugula, lemon caper aioli; 24K Risotto – limoncello lobster, Arborio rice, saffron, gold puffs; Gnocchi – potato dumplings, pork Bolognese, ricotta salata; Big Eye Tuna “Capanesca” – eggplant, fingerling potato, Calabrian chili, caper; and Spicy Rigatoni Vodka – ‘nduja sausage, tomato, breadcrumbs, cream.

As for the bar program, the restaurant offers seasonally inspired riffs on classic cocktails as well as Italian aperitivi including drinks like the Resting Spritz Face – rose prosecco, Aperol, strawberry, blood orange Pellegrino; Emilia’s Sangria – Lambrusco, cherry, citrus, rosemary; Negroni Man – plantation rum, Campari, sweet vermouth; Bellini – prosecco, white peach; and Agrodolce Vida – amaretto, citrus, bitters. A robust espresso menu is also available for the perfect finish to your meal. The wine menu was carefully developed by General Manager and Partner, John Dal Canton. Canton has chosen wines by the glass that are approachable and sustainable with the majority being from Italian regions.

Dal Canton says, “We are looking forward to being a gathering place for Dallasites where they can enjoy the best hospitality, good company and comforting American-Italian dishes and drinks.”

Fiatto will open Friday, March 11 for happy hour and dinner only for now. Hours of operation will be Monday - Thursday 5 p.m. - 10 p.m., Friday 5 p.m. - 11 p.m., Saturday 5 p.m. - 11 p.m., and Sunday 4 p.m. - 9 p.m.
